Mill & Grade
Parchment is hulled, then sorted by screen size and density — the same convention behind Kenya’s AA, AB, and PB grades.

Defect Grading
Each 350g sample is checked against the SCA’s two-category system: zero primary defects (full black, full sour, foreign matter), no more than five secondary defects, to qualify as specialty.

Moisture & Water Activity
Every lot is tested for both moisture content and water activity, held below the SCA’s 0.70aw ceiling — the more reliable predictor of spoilage risk in transit.

Cupping & Scoring
Sample roasted and cupped to the SCA protocol — 8.25g to 150ml, water at 92.2–94.4°C, evaluated 8 to 24 hours after roasting. Only lots scoring 80 or above are offered as specialty.

Sample Approval
Approved lots ship out as pre-shipment samples so you can cup and confirm the profile yourself before committing to a contract.

Packaging & Documentation
Hermetic, GrainPro-lined bags protect moisture and water activity in transit. Every lot travels with full traceability — farm, elevation, variety, process — plus certificate of origin and phytosanitary paperwork.

Shipment
FOB Mombasa, with cupping notes and lot documentation accompanying every shipment so what you ordered is what arrives.

What we're currently offering
AA
Screen 17–18
The largest standard bean size. Not a cup-quality guarantee on its own — every lot is still cupped and scored regardless of size grade.
AB
Screen 15–16
A mix of two adjacent screen sizes, and the most widely planted grade in Kenya. Frequently outscores AA from the same lot in the cup.
PB
Peaberry
A single rounded bean formed when only one seed develops in the cherry, graded separately from the standard flat-bean sizes.
Other grades
C, TT, naturals, and more
Screen size isn’t what determines whether we’ll offer a lot. Any grade that clears the SCA cupping threshold is fair game — AA and AB just happen to be common.
